As is most often the case, products that are entitled to AOC, or Appellation d'Origine Contrôlée, are subject to stringent, legal, guidelines and Cognac is no exception!

Cognac is often mistakenly viewed as a generic term for brandy, but it's a very specific brandy, distilled from wines produced in the region around the town of Cognac, in the Charente & Charente-Maritime départements.

To be correctly labelled a Cognac, the wines that produce the spirit must be produced from a very specific list of grape varieties, the spirit must be distilled twice in copper pot stills and aged in French oak barrels, from specific regions of France for a minimum of two years.
