Empirical Spirits Ayuuk 50cl
From the Empirical Spirits team in Copenhagen comes their Ayuuk Spirit, which is focused on the flavours of Pasilla Mixe (A Smoke Dried Chilli), The Pasilla Mixe is sourced from a local market in Oaxaca City.
To Produce this they take they macerate the Chillies in Low Wines before it is then distilled with Pastille Mixe Kombucha and then aged inside Oloroso casks for 5 days.
Plenty of dry Spicy notes running throughout with a Vegetal Body and hints of Orange Citrus and Vanilla to balance.
